I'm sure there are pedal vendors out there with generic, adaptable parts, but you would be better off just getting Pinto pedals. Just be careful and only get the early Pinto (71-73) pedals (you will need the cable too).
The trans crossmember only needs to be reversed and have the holes slotted. I reused the C-4 rubber mount already on the Pinto. Some have stated it feels soft (I agree) but a new or Urethane mount would likely be stiffer.
The driveshaft can be tricky. Some are close enough, while others are off by about an inch. The general consensus is that 45.5" is needed if you use a 8" rear. It may be different if you use the 6-3/4" rear. If you reuse the automatic speedometer gear remove the tip. It will bind on the T-5 case and cause the gear on the output shaft to slide back (ask me how I know).
Lastly, I have no advise regarding the 2.0 bellhousing, flywheel, clutch, pressure plate to give. I've done this, but with an existing 2.3/T-5.
