I'm no expert on this, but I've come across several things on this topic recently that I think are worthwhile sharing.
1) RIGHT NOW -- there is some NOS Pinto woodgrain for sale on e-bay. Even if there is not enough to do the whole car, getting a piece of it for comparison to use to select some replacement material is worth the $15 bucks this will probably go for! Auction closes Jan 17. If nobody else buys it, I just might grab it and save it for anyone who needs it later.
(From E-bay)
This auction is for a new old stock woodgrain transfer. 1974 FoMoCo product. Part number is: D4AZ-7120748-A. Comes with Ford form I.S.4444 instruction sheet. Decal is in nice plyable condition. Approximatly 17 by 69 inches long. Ask questions before you bid. Winning bidder to pay ACTUAL shipping + $3.00 handling fee. I package the items after they sell so I am unable to quote shipping until the auction is over. No personal checks, please. Please check my other auctions

[If the link doesn't work, search on ebay for "Ford Pinto Woodgrain" and up it comes]
2) This other link just came up from my Station Wagon Club membership about a great source for woodgrain vinyl .... they don't specify Pinto particularly, but they have some that looks awfully close.
