The 302 swap is pretty easy to do, but you will have to find a new radiator to match the 302, and will have to narrow the rear-end. You may want to lose the 3 speed, also. Look for a  Mustang 4 or 5 speed, depending on what you want to set the car up for. The 3 speed will work if you just want to make it go down the road, but it suffers from too wide a gear-band width to be fun on the street. Also, you will have to make or find a drive shaft for it                                                                                                               The next larger problems to be solved will  be the suspension and brakes, the Pinto brakes are not very high performance . There are companies out there who can direct you to upgraded steering, springs, sway bars, and  perhaps lowering mods if you wish it to handle.
Pretty much all the rest is details, getting fuel and spark to the
engine. Exhaust headers are available.  It can be a lot of fun to do a swap like this, but it will take time and money.
Good luck, tell us how it goes.
