Looking to source a pair of new covers to replace a couple of rusty one's! 1978 Pinto!

Do you mean Rear Brake Backing Plates? As far as I know there have never been any Dust Covers  made for the Rear Brakes on a Pinto They never came with Rear Disc Brakes! Also I think it makes a difference as to which type Of Differential you have.
