Title: Best Weber set up?

So, on the motor I'm going to build, I really want to run twin Weber carbs.  I love the look, the sound, everything.  What is the best setup?  40s?  44s?  I was looking at Burton and Racer Walsh and they both have kits.  Burton even has a kit for down draft rather than side draft!  Talk about wild looking?  Is there enything else I need to look for?  I heard that Comp Cams had a Weber-specific cam, and I also heard they like low fuel pressure, so a regulator might be needed.  Any guidance on how to set this thing up?

40's are street/race frendly. 45's are race carbs/not so street frendly.
