Carburetor and intake manifold questions

I want to replace my stock intake and carb.  I want to know what are good replacements for these two.  Bottom end is stock and the head is being rebuilt to a little better than stock so it'll flow better.  Just want something and I have read people do not favor Holley.  Edelbrock and Demon seem to be the more popular.  Do either company make a carb small enough for a 4 cylinder?

Also I have read about using the EFI intake manifold and using the adapter, my only question is will it clear my hood?  My car is a 1979 pinto.
