It will depend on your tire size and final drive, not the tranny (directly anyway, yes the INTERNAL gear might be different, but if you can't change it, it does not matter). Your best bet (easiest) is to drive the car following someone with a correct speedo, find out how far off it is and see what gear is in it. A little math and your there.

Hey Rob,
a 21 tooth pink with the 7 tooth yellow drive gear should get you close,

I knew I could count on you 2 to have an answer ;D Next question is for Tony: Do you know where to get the gears?

Hello Rob,
the yellow drive gear should already be in your T5 tranny.
I bought my gears from hanlon
But I needed a Black 6 tooth to slow my tranny for the 4.11 gears

Does the mph limit on the speedo affect the gears I should use? For example would you use the same gear set on a speedo that maxs out at 110 vs. the 160 ? ???

Hey Rob,
The early Pinto speedo only goes up to 110..
 How should I know!!!!! :P

No seriously! I think the speedo gears ar only affected by rear axel gears and size of tires. Like Bill said...
