72 Pinto Wagon , 2000CC, 2V carb.  Restored the car inside and out.  Replaced plugs, points, rotor, distr. cap, wires, fuel pump, hoses, belts, etc.  Runs poorly.  Tried a new (rebuilt carb.) It ran worse, floats in new carb. sticking etc. Sent is back.  Put original carb back on, Idle very rough, starves out and stalls, hesitations when warmed up, flat power. 

1) should I go for another rebuilt carb?
2) where can I find a schematic that shows the location of adjustments on carb., and that tells me what they should be set at?
3) should I just take it to a really good mechanic.?

vacuum connections on those early models are minimal (compared to later models), Check all the vacuum hoses & connections for leaks.  There should be a decal somewhere in the engine compartment or on the engine that will show the routing.
 
make sure the carb mounting nuts are secure. find the 'decel' valve and make sure it is not sucking air.  these can go bad.
 
 
the only substitute for cubic inches is BOOST!!!
Of course money helps too!!!

30 years ago I had similar conditions, did the exact things you have done, ended up finding the vacuum leak in the oil separator/PCV hose, it was hard and cracked and didn't seal properly at connections.

I had issues with the same symptoms. Turned out I was having a MASSIVE vacuum leak due to a ruptured diaphragm in my deceleration valve, so I removed it and plugged its hole with a pipe plug (painted aluminum)(3/8 NPT, iirc) and some teflon tape and haven't looked back. :) Is it Concours worthy? Nope, but it screams and is running about as perfect as it gets. I've replaced just about everything you have...plus had to have my head rebuilt due to destroyed exhaust valves, but that's another story. :)
